Aval Kozhukkattai



Ingredients:

Rice flour- 2 cups
Salt- 1 tsp
Hot Water- to knead
Jaggery- 1 1/2 cup
Water-1/2 cup
Grated coconut- 1 cup
Puffed rice-1 cup
Cardamom Powder- 2 tsp
Cashew nuts & raisins- little if required

Method:
·         Mix Rice flour with Salt and water and knead it to a soft dough.
·         In a pan add Jaggery and water and melt it completely. Pass the mixture through a strainer.
·         Keep the mixture again in the same pan and add coconut and puffed rice to this.
·         When the water absorbs completely, add cardamom powder and nuts.
·         Make lemon size balls using the rice flour dough.
·         Take the ball one by one and flatten the same using your finger (apply little water if it sticks to your hand), put 1 tbsp of the puffed rice and coconut mixture into the ball and close it and make a ball.
·         Do the same procedure for the rest of the balls.
·         Keep the balls in a steamer and steam for around 10 mins.
·         To check whether its done, insert a fork or a skewer into the ball, if it comes out smooth without sticking, its done.
·         Serve Hot.

Note: You can replace puffed rice with boiled green gram and many other varients.
