Sausage Masala..

Ingredients: Oil – 1 tsp, Fenugreek– 1/2 tsp, Cumins seed – 1/2 tsp,White rice grain– 1/2 tbsp, Coriander seeds– 3/4 tbsp, Curry leaves– 1 string, Red chili powder– 1/2 tsp Sausage-250 gms (I used pepper flavored sausage) Tomatoes – 1/2 cup chopped Oil – 2 tbsp Mustard seeds – 1/4 tsp Shallots/small onions – 1/4 cup chopped Curry leaves – 1 string Ginger garlic paste – 1/2 tsp Salt as required Turmeric – 1/4 tsp Water – 1/2 cup Coriander leaves – ¼ cup Preparations: Ingredients in 1-In a heavy pan add oil and roast in fenugreek, cumin, rice grain, coriander seeds, curry leaves until it releases a nice aroma. Turn off the flame and add red chili powder and allow it to cool and later grind it to a paste/powder. Prawns Varattiyathu...Prawns dry masala...Bachelors Recipe

Ingredients: Prawns- 250 gm cleaned & deveined Tomatoes- 100 gms Chillipowder- 1 tsp Turmeric powder- 1/2 tsp Coriander powder- 2 tsp Garlic- 4 cloves Ginger- 1" piece Coriander leaves- little Curry leaves- little Oil- 1 tbsp Method: Grind all the ingredients except the prawns to a fine paste. Mix the paste in with the prawns and keep aside for 15 minutes. In a pan add oil and stir in the entire masala prawns and cover and cook in medium flame till the prawns are cooked and the oil separates from the masala. Stir in between also. Garnish with Curry leaves.

Simple Fish Curry with more thick gravy..

Ingredients: Any Fish-1/2 kg Onion- 1 medium- roughly chopped Coriander powder- 2 heaped tbsp Chilli powder- 1heaped tbsp Turmeric powder- 1 tsp Ginger- 1 inch piece chopped Garlic-1 pod chopped Salt- As required Water- as required Oil- 1 tbsp Mustard seeds- 1 tsp Fenugreek- a pinch Kudampuli/Kokum- 2 small pieces Curry leaves- 2 strings Method: Clean the fish and keep aside. Grind together Onion, coriander powder, chilli powder and turmeric powder to a fine paste. In a pan/ clay pan add oil, splutter in Mustards and fenugreek. Add one string curry leaves, Ginger and garlic chopped and saute until it releases a nice aroma and becomes soft. Add the ground paste and saute till oil seperates on top. Add Salt, water, kudampul/kokum and fish to this and bring it to boil uncovered. When the mixture starts to boil, simmer it, cover and cook till the fish is done. Red Fish Curry Kottayam Style

Ingredients: Fish- 1/2 kg Shallots-  10 chopped Ginger and garlic paste- 1 1/2 tbsp Coriander powder- 2 tbsp Kashmiri Chilli powder- 2 tbsp Turmeric powder- 1/2 tsp Coconut grated- 1 cup Kudampuli/ Kokum- 3 medium pieces Coconut oil- 1 tbsp Fenugreek- 1/4 tsp Mustard seeds- 1 tsp Curry leaves- 2 strings Salt- as needed Method: Mix together chillipowder, coriander powder and turmeric oil with little water to make a paste. Soak kudampuli in 5 tbsp water. Heat oil, splutter mustards and fenugreek. Add ginger garlic paste and saute for 4 minutes. Add shallots and curry leaves and saute till they are soft. Add the paste and salt and fry till the oil starts seperating. Add kudampuli along with the water and mix well. Add the fish pieces and carefully combine them all. Ingredients: Prawns- ½ kg cleaned and deveined. Onion- 3 big sliced Ginger paste- ¾ tbsp Garlic paste- ¾ tbsp Green chillies- 2 Oil -2 tbsp Chilli powder- 2 tsp Turmeric powder- ½ tsp Tomato- 2 medium sliced Kudampuli/Kokum- 2 small pieces Curry leaves- 2 strings Salt- as required. Method: ·          Heat a kadai and add oil. Add onions and sauté till light brown. ·          Add ginger, garlic and green chillies and sauté well. ·          When it turns brown add all the powders and sauté well till the raw smell goes. ·          Add tomatoes and sauté until oil is separated. ·          Add Prawns, kokum, salt and curry leaves and mix well. ·          Cover the pan and cook the prawns on low heat. Badami Chicken..

Ingredients: Chicken- 3/4 Kg cut into medium pieces Turmeric powder- 1 1/2 tsp Curd -1/2 cup Chopped tomato- 1 cup Water- 1/4 cup Oil- 4 tbsp Onion chopped- 1 1/2 cup Kashmiri Chilli- 10 Garlic- 1 1/2 tsp paste Cinnamon- 1 inch piece Cardamom- 3 Cloves- 6 Salt- to taste Tomato sauce- 2 tbsp Badam/ Cashewnut- 1 cup, paste Coriander leaves- 3/4 cup chopped Method: 1) Remove the seeds of Kashmiri chilli and grind it to paste. These 10 chillies would be enough for a spicy curry. 2) Marinate the chicken with turmeric powder and curd and keep it for 1 hour. 3) Cook the chopped tomatoes with 1/4 cup water and grind it to paste. 4) Heat the oil in a Kadai and add the chopped onions and saute till light golden color. Ingredients: Beef- 1 Kg Shallots- 1/2 cup chopped Ginger- 1" piece crushed Garlic- 1 tbsp crushed Green chillies- 4 slit Coriander powder- 3 tsp Chilly Powder- 2 tsp Turmeric powder- 1/2 tsp Garam Masala powder- 1 tsp Curry leaves- Little Coconut oil- 2tbsp Salt- As required For frying: Coconut Oil-1 tsp Shallots for frying- 6-7nos crushed Chilly powder 1 tsp Curry leaves Method: 1) Cut beef into small cubed pieces and clean in water properly. Easy Chatti chicken..

Ingredients: Chicken- 1/2 kg Turmeric-1/2 tsp Garam Masala-1tbsp Pepper powder- 1 tsp Salt & Water- As required Grated coconut-1 cup Green chillies-8 Ginger-1" piece Garlice- 8 flakes Coriander leaves-1 cup Cashewnut-1/2 cup Onion chopped finely- 1 big Tomato chopped finely-1 big Curry leaves- hand full Coconut oil- 1/2 cup Method: Cut chicken into small pieces and cook with ingredients from 2-5. Grind from 6-11 in a butter form. In a medium size clay pot add oil and add curry leaves and onions, saute well Now add tomatoes and saute until they become a paste.  Now add the ground coconut paste and mix well. Add the cooked chicken along with the juice from it and cook. When the curry boils, remove from fire. Note: You can have this with Rice, Bread, Chappatti, Appam and Roti.

Dedicated to my kunjamma Ingredients: Dried prawns: 1 cup Coconut Oil- 1 tbsp Small Onion- 1/2 cup Garlic-3 flakes Ginger- 1 inch piece Green Chillies-2 Curry leaves-2 steam Salt- as required Method: Wash the dry prawns in water and drain well. Crush the small onions, ginger, garlic and green chillies. In a fry pan add oil and fry the prawns in low fire. It should not be crispy as such. Add the crushed mixture to this and fry well. Add curry leaves and salt.( remember that it may already contain little salt in some packed dried prawn). When the onions are fried well, remove from fire and serve hot.

Meen curry( Fish Curry)

Ingredients: Fish-1/2 kg cleaned and cut into pieces Small Onions-3 sliced Garlic-1 tbsp sliced Ginger-1 tbsp(sliced lengthwise) Green Chilly slited- Curry leaves-2 stems+2 stems Chilli powder-4 tsp Coriander powder-1 tsp Turmeric powder-1/2 tsp Kerala tamarind(Kudampuli)-3-4 pieces Salt-As required Mustard seeds-1 tsp Coconut Oil-2 tbsp+ 1 tsp Water- As required Method: Wash and cut the fish into pieces.  Soak the tamarind in water. In a pan add oil and mustards.  When it begin to splutter, then add Small onions, garlic, ginger, green chilly and 2 stems curry leaves. Saute well. When this becomes golden brown then add all the powders and simmer the fire.  Fry till the raw smell goes. Then add 2 cups water and salt as required and also the soaked tamarind.  When the water begins to boil, simmer and then add the fish pieces.
