Quick Chocolate cupcake

Ingredients: Flour- 1 cup Eggs- 2 lightly beaten Caster Sugar- 2/3 cup Butter- 100gms Cocoa Powder- 1/3 cup Baking powder- 1/2 tsp Salt- 1/4 tsp Soda Bicarb- 1/2 tsp Milk- 1/2 cup Vanilla Essence- 1 tsp Method: Sift together Flour, cocoa, baking powder, salt and soda bicarb and keep aside. Beat sugar, butter and vanilla till creamy. Gradually add eggs little by little and mix until well combined. Add the flour mixture to the creamed mixture adding along milk alternatively. Beat until just combined. Spoon into the cupcakes 3/4 portion each. I had scooped 30 gms each into 10 inch liners. I got 22 cup cakes out of this. Bake in a preheated oven @ 170 degree Cel for about 10-15 mins. Serve with chocolate ganache...  Children will love this

Brown Sugar Vanilla Cupcake

Ingredients: Flour- 3 cups Eggs-4 Butter- 1 cup Brown Sugar- 2 cups Milk- 2/3 cup Baking powder- 1 tsp Vanilla Essence- 3 tsp Salt- A pinch Method: Sift together Flour, baking powder and salt and keep aside. Cream together butter and brown sugar..add Eggs and cream again. Add the flour and milk to the creamy mixture and beat just until the batter is mixed well. Add vanilla essence. Pour this to cupcake liners and bake @ 180 degree Cel for 18 to 20 min. This makes 24 cupcakes.

Ingredients: Flour- 250 gms Egg- 250 gms Sugar- 250 gms Butter- 250gms Baking powder- 2 tsp Salt- a pinch Pine apple essence- ½ tsp Vanilla Essence- 1 tsp Dry Fruits- ½ cup Method: ·          Seive together Flour, Baking powder and salt. Keep aside. ·          Powder the sugar. ·          Beat butter till creamy and then add sugar to this. Easy Pineapple Sponge

Ingre dients: 125g Unsalted Butter, softened 1 cup Sugar (powdered) 3 Eggs 1 tsp Pineapple essence 1½ cups Plain flour 1 tsp Baking powder ¾ cup Milk Method: Sift flour, salt and baking powder and keep aside. In an electric mixer, beat butter for 2 minutes until creamy. Add sugar batch by batch and beat well in between each batches. Add the eggs one at a time, beating for about a minute between each addition. Add the pineapple essence and beat until everything is well combined. Now add the flour little by little to the butter mixture adding along the milk in between, mix until well combined. Fill cupcake papers ¾ full. Bake this in a preheated oven @ 180 0 Cel for about 15-18 minutes or until a skewer inserted into the middle of a cupcake comes out clean or until the top is light golden color. Ingredients: Flour- 2 cups Egg-2 Cocoa Powder- 1/2 cup Butter-100gms Curd-1/2 cup Baking Soda- 3/4 tsp Sugar- 2 cups Warm Water- 1/2 cup Vanilla Essence- 1 1/2 tsp Note: Warm water should be just above the boiling point. No need to powder the sugar. No need to mix the Baking soda into the Flour. Method: The steps are quite simple, just follow the order of putting the things into the bowl which is very important. Preheat the oven @ 150 deg C for 10 min. Meanwhile in that 10 mins time you can make the cake batter. Grease two cake tins of 9" size with butter and dust it with cocoa powder. To a big bowl add Eggs, over that add Butter, then sifted Cocoa powder, over that add sifted Flour, on top of that add Curd, then Baking Soda, then Sugar in such a way that it covers the entire ingredients like a small hill covered with sugar.. On top of it add hot water. Now mix thoroughly with a beater for around 3-4 mins. Transfer it to the greased tins and bake @ 150 Deg C ...

Plain Tea Cake

Ingredients: Flour- 3 cups Butter- 1 cup Sugar- 2 cup Egg- 4 Milk- 1 cup Baking powder -1 tsp Cardamom-4 Nutmeg Powder- 1/4 tsp Vanilla Essence-1 1/2 tsp Salt- 1 tsp Method: 1) Seive together Flour+ Baking powder+ salt  for three times. 2) Seperate egg yolk and white 3) Powder sugar+ cardamom+ nutmeg 4) Beat Butter and sugar well. 5) Add egg yolk one by one to the butter mix and beat well. 6) To this add Flour mixture little by little alternatively add milk also. 7) Add vanilla essence. 8) In a seperate bowl beat egg white for 5 minutes. 9) Slowly add the egg white to the batter and mix well. 10) Bake firstly at 150 degree C for 20 mins and then lower the temperature to 130 degree celsius and bake for 10-15 mins until the cake is done.

Chocolate Cake

 Ingredients: Maida- 3 cup Egg- 3 Cocoa- 1 cup Butter- 1 cup Baking Powder- 1 tsp Sugar- 2 1/2 cup Curd- 1 cup Baking soda- 1/2 tsp Vanilla essence Boiled water-- 1/2 cup Method: 1) Mix cocoa and 1/4 light hot water and make a smooth silky paste. 2) Seive together Maida, Baking powder and Baking soda 3-4 times. 3) Beat egg well and add sugar to this and beat till there is no sugar granules. The more you beat, the fluffy the cake will be. 4) Add Butter and Cocoa paste to this and mix well. 5) Now add Maida mix and curd alternatively and mix slowly in one direction so that there is not lumps formed. 6) The batter will be very thick now, so add the rest of the boiling water and mix well. 7) Add Vanilla essence and pour the cake batter to a greased tin. 8) Bake in a pre-heated oven @ 170 degree for 45 min. Ingredients: 1)  Custard Powder(Vanilla)- 50gms (1/2 cup)       Maida- 200gm (1 cup heaped)       Baking Powder- 1 tsp       Vanilla Powder- 1 tsp 2)   Powdered Sugar- 250 gm (1 1/4 level cup)       Butter- 250 gm( 3/4 level cup) 3)  Egg- 4( Yolk and white seperated)      Vanilla Essence- 1 tsp 4)  Kismiss, Cashew- 50 gms each( 2 tbsp each) Note: If you dont have Vanilla powder, you can opt for vanilla essence also which can be added along with the egg. Nuts are optional, without nuts also tastes yummy. Method: 1) Seive together the dry ingredients. 2) Beat Butter till smooth and add powdered sugar and beat untill smooth and silky. 3) To this add egg yolk and essence and mix well. 4) Add the dry ingredients little by little and mix well. 5) Beat egg white well and add to the cake mix and mix well with a wooden spoon. 6) Add the nuts finally and mix well. 7) Pour this ca...
