Chocolate Cake

 Ingredients:
Maida- 3 cup
Egg- 3
Cocoa- 1 cup
Butter- 1 cup
Baking Powder- 1 tsp
Sugar- 2 1/2 cup
Curd- 1 cup
Baking soda- 1/2 tsp
Vanilla essence
Boiled water-- 1/2 cup

Method:
1) Mix cocoa and 1/4 light hot water and make a smooth silky paste.
2) Seive together Maida, Baking powder and Baking soda 3-4 times.
3) Beat egg well and add sugar to this and beat till there is no sugar granules. The more you beat, the fluffy the cake will be.
4) Add Butter and Cocoa paste to this and mix well.
5) Now add Maida mix and curd alternatively and mix slowly in one direction so that there is not lumps formed.
6) The batter will be very thick now, so add the rest of the boiling water and mix well.
7) Add Vanilla essence and pour the cake batter to a greased tin.
8) Bake in a pre-heated oven @ 170 degree for 45 min.
This will make 2 big cakes.

Note: If you dont have a mixer and its difficult to beat the sugar for longer time, you can powder the sugar and then beat till possible.
In a normal micro-convection oven, it will take 35- 40 mins only. You check the cake in between.
