Aval Kozhukkattai

Ingredients: Rice flour- 2 cups Salt- 1 tsp Hot Water- to knead Jaggery- 1 1/2 cup Water-1/2 cup Grated coconut- 1 cup Puffed rice-1 cup Cardamom Powder- 2 tsp Cashew nuts & raisins- little if required Method: ·          Mix Rice flour with Salt and water and knead it to a soft dough. ·          In a pan add Jaggery and water and melt it completely. Pass the mixture through a strainer. ·          Keep the mixture again in the same pan and add coconut and puffed rice to this. ·          When the water absorbs completely, add cardamom powder and nuts. ·          Make lemon size balls using the rice flour dough. ·          Take the ball one by one and flatten the same using your finger (apply little water if it sticks to your hand), put 1 tbsp of the puffed rice and coconut mixture into the ball and close it and make a ball. ·          Do the same procedure for the rest of the balls. ·          Keep the balls in a steamer and steam for around

Bread Upma

Ingredients: Bread: 8Slices( preferably a day old one) Onions-1 chopped Green Chillies- 2 nos chopped Ginger- 1tsp chopped Tomato-1 chopped Oil-1 tbsp Mustard Seeds- 1 tsp Cumin Seeds- 1 tsp Capsicum- 1 tbsp chopped Curry leaves- little Coriander leaves- little Turmeric Powder- 1/2 tsp Salt- as required Lemon Juice- 1 tsp(Optional) Grated Carrot- 2 tbsp(Optional) Method: In a Kadai add oil. Add mustard seeds. When mustards splutter, add cumin seeds, curry leaves. Sort Onions, green chillies, ginger, (Carrots) When it becomes tender, add tomatoes,capsicum, turmeric powder, salt and saute well. Soak the bread for a second in water and put the same into the kadai. Mix well until the onion mixture and bread mixes well.  Garnish with coriander leaves and (lime juice).

Melon Mango Shake

Ingredients: To serve 4 Musk Melon- 1 medium cut into cubes Mango- 1/2 Mango sliced Njalipoovan/Poovan Banana- 1 (preferably small type) Sugar-4 tbsp Frozen Milk- 1/4 Ltr Method: Blend together the ingredients and serve chilled. Courtesy: To Rahul
